Cassava

Cassava is a woody shrub that is cultivated for its edible starchy tuberous root, a major source of carbohydrates. It is also called yuca or manioc and is native to South America and West Africa. Cassava roots are very rich in starch, and contain significant amounts of calcium, phosphorus and vitamin C. Cassava-based dishes are widely consumed wherever the plant is cultivated and used worldwide for animal feed as well. In many countries, significant research has begun to evaluate the use of cassava as an ethanol biofuel feedstock.
